To cook or not to cook… that is the question

Everyday after work I ask myself whether I’m going to pick up some dinner or go home and make something myself. Lately, I have been just picking up food – usually from a place with a drive-thru. But, maybe by admitting here on my blog that I do this too much will help me go back into my kitchen. I do enjoy cooking, it’s a skill I’ve picked up recently. But, sometimes it really takes a lot of time and the appeal of the drive-thru is so strong! Well, maybe today I’ll cook a nice meal complete with vegetables. Or, maybe I’ll just get a salad from a drive-thru wink If you have any recipes you want to share feel free to post them below. Maybe it will encourage me to cook one for dinner!

That’s just lazy…I hope your Mom reads this and calls you..collect..and chews you out for like an hour or so..wink

Why dont you just stop by the grocery store tonight..then go home and make yourself a nice chef salad…with all of the fixings..sliced up cheese..ham..cherry tomatoes..cottage cheese..with a nice dressing…maybe some crackers on the side….and my personal favorite..a 6-pack of Coors Light…:)

You prolly eat less than an average yard bird anyway..so how much could it cost?

One night you just drop by Bi-Lo and go to the frozen section..you know the place..you have to open a glass door to get something out of it..

Get the Southern Home Beef or Cheese Ravioli..it comes in a 1 pound 9 oz. package…now this is the real ravioli..not the canned stuff..

Then wander over to the Campbell’s soup section and pick out your favorite soup..Cream of Roasted Garlic Mushroom or Cream of Shrimp..for example..

Then locate the lil jars of Spice World minced garlic…again..the real garlic..not garlic salt..head on down to the cheeses..there you will find a 99 cent pack of Shred-Mate Ched-O-Mate cheese…you will also need a bit of Parmesan grated cheese..

When you get the ravioli boiling ( takes about 7 to 9 minutes)..put some butter in a sauce pan..dice up a good portion of onion and drop them in..add a dash of beer..let them cook for a minute or two then add a teaspoon of garlic and your cream of whatever soup…lower the heat..

When your Ravioli is done..strain them and put them on the plates (one package is good for two people)..then pour the cream of whatever soup over the ravioli..add shredded cheese..then the parmesan…

This a relatively fast and easy inexpensive dinner..and is no doubt good for you too…

..and if Mom reads this..you will likely not get that phone call..wink

Just in case any of you decide to try this..

Something to remember..

Get your water boiling with a dab of butter and some salt.. before adding the ravioli..

You also want your cream of whatever sauce to be thick…so dont water it down like soup..

Whenever you want a change..just try another of your favorite “cream of” soups..or if you are brave..try the Cheesy Ragu Roasted Garlic Parmesan spaghetti sauce (white sauce)...one jar will do two packs of ravioli..

I say you can feed two people with one package..but honestly you would have to be awful hungry to finish it all..I believe you could feed two adults and two kids with one package..if you had reasonable portions served with a side salad possibly..

I’ve been feeling the same way about dinner, and my husband and I are trying to save more and eat healthier. We’re guilty of going out because he is a chef and doesn’t want to cook when he gets home (and I get home later than he does). So I got this from my mom last week, sorry it’s not more specific—it’s more to taste. It’s one of my favorites:

Linguine with Clam Sauce
Dice an onion and cook in olive oil.  Add chopped garlic.  Add 2 cans of minced clams and about 1/2 box or 3/4 box of chicken broth.  Add some more olive oil too - maybe 1/4 cup more.  Cook linguine. 

Mix all together and put about 3/4 cup of parmesan cheese into mixture and stir.  Sprinkle top with more parmesan cheese.
